Amboli (Dosa)

Amboli is a Maharashtrian version of an uttapam. It is made slightly thick. It can be served with any chutney of your choice but goes best with green chutney. This is a no ferment and instant dosa, which is fantastic for those hurried mornings.

1 cup SFC Amboli flour ( rice, urad dal and channa dal mix)
1.5 cups of water
2-3 green chilly finely chopped
1 tbsp curry leaves chopped
1 tbsp coriander leaves
1 tsp jeera
Salt to taste
For variations, add grated veggies and greens.
Mix the flour and water and beat it well to remove lumps. Rest for 1 hour
Check for consistency and add little water if needed.
Add salt, chilly, coriander, curry, jeera and mix well. Amboli batter is ready
Heat and grease a Tava. Add a ladle full of batter and spread. Add a little oil on the sides and let it cook.
Flip over and cook on the top side once cooked on the underside.
Serve hot with chutney of your choice.
